I know! They go together like bread and butter right? John Lewis and canned mackerel.

But think about it like this – you go to John Lewis, you wander around for ages, gazing at all the things you’d have in your house if you won the lottery and didn’t have children/a partner who spoilt everything by leaving dirty cups on your carefully Instagram styled vintage sideboard, and then you come home, exhausted, and whip yourself up my mackerel salad nicoise and eat it on your fancy new John Lewis plates!

Job’s a good ‘un, as we say in our family, fondly mocking my mum’s partner Mitch.

As you almost 100% definitely read my mackerel recipe post earlier this week, I expect we’re already on the same page.

‘But Jo,’ you’re thinking to yourself, ‘I never realised canned mackerel was so versatile! If only you had another quick and easy mackerel recipe to share!’

I am, as ever, here to serve. (Not literally – you have to make it yourself.) Today I’ve got a second recipe for you – mackerel with rice and peppers.

Easy mackerel with rice recipe

This recipe come courtesy of Princes themselves, and couldn’t be simpler – literally just grab a bag of rice, chop a couple of peppers and some spring onions, and top it with some mackerel fillets in spicy tomato sauce.

I mean seriously, how long did that take?? About five minutes? But you’ve ticked all of the ‘not biscuits for lunch again’ boxes – you’ve got your carbs, fresh veg, AND one of your recommended twice weekly portions of oily fish, rich in those lovely omega 3 fatty acids.

    I always have loads of these tins in the cupboard, they are so handy to have. Quick and easy lunch in a baked sweet potato is my fave. Not tried the Brazilian flavour yet so that’s top of my list to try! Will give your recipe a try too x

    I always buy the plain mackerel normally but some of the limited edition flavours sound amazing. Definitely going to try the peppered wood smoked ones and I am really curious about the Brazillian ones too. I know it is a bit boring but my favourite way to eat them is just on toast as it is an absolutely delicious but super quick lunch.

    I buy both mackerel and tuna in sunflower oil. I prefer the texture in sunflower oil and its good for you.

    Definitely the Rich Tomato and Roasted onion variety. Love these on toast for lunch, so quick and easy, I always have a tin or two in the cupboard. My kids like them as a pizza topping too, very tasty.

    My husband turns his nose up at any fish so I tend to buy mackerel in tins and they’re great essential to have in the cupboard. I love plain mackerel on granary toast. If I have time I’ll often make up some fishcakes, have some for dinner and then freeze the others for an easy midweek dinner.

    I had no idea there was such a variety of Mackerel flavours! I love the sound of the Texas BBQ Mackerel fillets, they sound delicious!
